Instructions Step by Step

  1. Prepare the masa dough: In a bowl, mix masa harina, salt, and warm water. Knead until a soft, pliable dough forms. Cover with a damp cloth.

  2. Form the sopes: Divide the dough into 8 balls. Flatten each into a thick tortilla (about 4 inches wide). Cook on a hot skillet until lightly browned on both sides. While warm, pinch the edges to form little walls around the sope.

  3. Cook the chorizo: In a skillet, heat 2 tbsp of oil and cook the chorizo until browned and crumbly. Remove excess grease if needed.

  4. Assemble: Spread a thin layer of refried beans on each sope. Top with cooked chorizo, lettuce, tomato, onion, cheese, and crema. Serve immediately.
