Ingredients

  • 8 fresh corn tortillas

  • 1 cup huitlacoche (fresh or canned)

  • 1 cup Oaxaca or mozzarella cheese, shredded

  • ½ medium white onion, finely chopped

  • 1 fresh chile serrano or jalapeño, sliced (optional)

  • 1 sprig fresh epazote (or substitute with cilantro)

  • 2 tbsp vegetable oil or butter

  • Salt to taste

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent.

  2. Stir in the huitlacoche and season with salt. Cook for 5–6 minutes until tender and aromatic. Add the chile and epazote, then mix well.

  3. Warm the tortillas on a griddle or comal until pliable.

  4. Place a portion of huitlacoche mixture on one half of each tortilla. Sprinkle cheese generously over the filling.

  5. Fold the tortilla in half to close and press lightly.

  6. Cook each quesadilla on the griddle with a little oil until golden on both sides and the cheese is melted.

  7. Serve hot, ideally with fresh salsa or guacamole on the side.
